Who doesn't love Egg Rolls?
The filling is time consuming but is actually pretty healthy! (See below for a recipe hack.)
Here are the basic:
Mix fresh bean sprouts, shredded cabbage, shredded carrots, and chopped green onions. Set aside.
Cooked lean ground pork and season it with a teaspoon of oyster sauce and teaspoon of minced ginger. And veggie mix and cook until almost tender. Remove from heat to cool.
Layout egg roll wrappers, make egg "sealer" from equal egg white and water.
Preheat 1/2-1 inch canola oil in pan.
Then roll cooked mixture into wraps, seal with egg wash and pan fry just until golden.
For a true restaurant appetizer experience, pair with cream cheese wontons.
Recipe Hack: if you're looking to save time and cabbage and carrots, try buying coleslaw mix in a bag.
Want it more healthy? Brush rolls with olive oil and bake instead of frying.

White Bear Lake ‘BEAR’ly Open Golf Tourney and Dance
A golf tournament on ice and community dance!

This event brings hundreds of local residents to Ramsey County beach on the frozen shores of White Bear Lake to enjoy an afternoon of ice on the lake.
An 18-hole course, complete with real pine trees, a hospitality tent, food and entertainment make it a great way to have fun and raise money for a charity.
Form your own foursome, or sign up individually. The event is open to all ages. There are two 9-hole courses laid out on the ice. Tee times are set for noon and 1:00pm. Golfers play with tennis balls and use golf clubs, hockey sticks, tennis rackets, or anything else that can propel a tennis ball.
The dance is Friday night at the White Bear Country Inn, 8 p.m.
All net proceeds of the White Bear Lake ‘BEAR’ly Open Golf Tourney and Dance go to White Bear Lake Area Food Shelves – where the need has never been greater. To date the event has raised over $78,000 to the food shelves. Based on the purchasing power of the food shelf, this has resulted in over $700,000 in food product.

Meatball Cabbage Soup
Meatball Cabbage Soup is my family's take on the cabbage soup diet recipe.
The addition of turkey meatballs adds protein and flavor to this familiar recipe. Fresh potatoes tomatoes instead of canned and green onions instead of white or are probably the two other biggest changes we've made.
This healthy, hearty soup made right at home can rival any Restaurant soup of the day. Enjoy!
Ingredients
½-1 head of cabbage, chopped
1 cup celery, chopped or diced
5 stocks green onion, diced
1 cup carrots, chopped or diced
1 green bell pepper, diced
3 cloves garlic, minced
6 cups chicken broth
6-10 Roma tomatoes, diced
15-20 Turkey Meatballs (smaller meatballs or meatballs are cut in half work better)
Olive oil
Optional Seasonings to Taste
1 teaspoon oregano
1 teaspoon basil
½ teaspoon red pepper flakes
1 teaspoon coarse ground black pepper
½ teaspoon salt
Instructions
Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add celery, onions, bell peppers, and carrots. Saute until slightly tender.
Stir in garlic.
Pour in chicken broth.
Stir in oregano, basil, red pepper flakes, black pepper and salt (if using)
Stir in tomatoes and cabbage.
Bring to a boil and then reduce heat.
Cook only until cabbage is tender.
Taste broth and adjust seasoning if needed.
Serve and enjoy.
