Meatball Cabbage Soup

Meatball Cabbage Soup is my family's take on the cabbage soup diet recipe.
The addition of turkey meatballs adds protein and flavor to this familiar recipe. Fresh potatoes tomatoes instead of canned and green onions instead of white or are probably the two other biggest changes we've made.
This healthy, hearty soup made right at home can rival any Restaurant soup of the day. Enjoy!



Ingredients

½-1 head of cabbage, chopped
1 cup celery, chopped or diced
5 stocks green onion, diced
1 cup carrots, chopped or diced
1 green bell pepper, diced
3 cloves garlic, minced
6 cups chicken broth
6-10 Roma tomatoes, diced
15-20 Turkey Meatballs (smaller meatballs or meatballs are cut in half work better)
Olive oil

Optional Seasonings to Taste
1 teaspoon oregano
1 teaspoon basil
½ teaspoon red pepper flakes
1 teaspoon coarse ground black pepper
½ teaspoon salt



Instructions

Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add celery, onions, bell peppers, and carrots. Saute until slightly tender.
Stir in garlic.
Pour in chicken broth.
Stir in oregano, basil, red pepper flakes, black pepper and salt (if using)
Stir in tomatoes and cabbage.
Bring to a boil and then reduce heat.
Cook only until cabbage is tender.


Taste broth and adjust seasoning if needed.
Serve and enjoy.

BTA Pasta Salad (Bacon Tomato Avocado)

With spring in the air I always get an itch to find new pasta salads and recipes for summer barbecues. My criteria usually includes recipes that are easy, have commonly found ingredients and are generally healthy. Here's my twist on a BLT salad recipe I found that is sure to be a hit!

BTA  Pasta Salad (Bacon Tomato Avocado) Ingredients:

8 slices turkey bacon, cooked until crisp and chopped into pieces
1/2 pound bow tie pasta, cooked according to package instructions and rinsed under cold water
1/2 cup lowfat mayonnaise (or plain Greek yogurt)
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1 teaspoon dried dill
1 cup halved cherry tomatoes
1 avocado peeled, pitted and diced
1 tablespoon Lemon juice
Salt to taste


Instructions:
-While your bacon and pasta are cooking, whisk mayonnaise, lemon juice, salt, garlic powder, pepper and dill together in a bowl.
-Gently stir cooled pasta, cherry tomatoes, sliced avocado and bacon into the dressing.  
-Refrigerate for 30 minutes prior to serving.

Make your favorite Asian recipes at home... yes, it is probably healthier that way!

Let me start by saying that I would pick up chinese take-out every day if left to my own devices... and my family probably would too! But... Asian food, especially americanized Asian food, can be hard on the waistline and the budget so let's see what we can do on our own...  Keep in mind, I am not a great cook.

Crab Rangoons

INGREDIENTS:
Imitation Crab
Cream Cheese or Neufchatel
Green Onions
Minced Garlic
Soy Sauce
Worcestershire Sauce
*Thoroughly mix above items together based on your flavor preferences. (Go heavy on your favorites)
And honestly, if you are missing one of the above ingredients like in the pic to the right) and you are craving this... make them anyway... well, the cream cheese is pretty important for binding. ;)

Wonton Wraps
Beaten Egg (or water) for sealing wraps

DIRECTIONS:
In a food processor, mix all filling ingredients. Layout your wonton wrappers on a large tray.  Spoon 1-2 tsp of filling on to each wrap.  dip your finger in the egg (or water) and dab the center of each side of each wrapper. Using your first finger and thumb on both hands, join the wrapper sides in the middle and pinch closed.
Fry in Cooking Oil  (about 2-3 in deep in a pot pre-heated to medium heat) until slightly golden.


Crab Rangoons Baked in the Oven
 The "lower fat/less stinky house" version is to coat them heavily with cooking spray and bake in 300-325° F oven for 8 to 13 minutes, or until golden brown them instead of deep frying.  It might help to dip your finger in vegetable oil and make sure the tips are coated well so they don't burn.
WARNING: Do not undercook. Gross.





Chinese Dumplings a.k.a. Pot Stickers (Makes 50)

INGREDIENTS:
12 oz cabbage finely minced in processor
1 teaspoon kosher salt (or 1/2 teaspoon table salt)
2/3 pound ground pork
1 teaspoon finely grated fresh ginger
1/4 cup minced Chinese chives or green onions (white and green parts)
1/8 teaspoon ground white pepper (or freshly ground black pepper)
1 1/2 tablespoons soy sauce
2 teaspoons sesame oil
1 tablespoon Chinese rice wine (or dry sherry)

1 package round dumpling wrappers

Directions:
Put cabbage on paper towel and sprinkle with salt; set aside
Mix the remaining filing ingredients well; ginger, chives, pork, pepper, soy sauce, rice wine and sesame oil.
The moisture should be leaching out of the cabbage on to the paper towel. Use you hands to squeeze out remaining moisture before adding it to filling mixture. Mix.
Place 1 tablespoon of filling onto each wrap and fold in half.
Use a cornstarch slurry or water to seal making sure to get all the air out.
Immerse dumplings in boiling water for 6-8 minutes.


If you like the fried version, drain the dumplings well after boiling them.  Lightly cover a frying pan with cooking oil and fry the dumplings for 1-2 minutes on each side.


Spring Rolls

INGREDIENTS:
Spring Roll Skins
Bean Thread Noodles

Plus any desired combination of the following (the items with stars are distinct flavors you would recognize from the restaurant)
Cooked Tail-off shrimp*
Thinly shaved cooked pork*
Fresh Mint Leaves*
Carrots sliced like matchsticks
Fresh Cilantro leaves
Red cabbage sliced like a matchstick
Crab meat

Dipping Sauce
1/4 Cup Hoisin Sauce
2 teaspoons rice vinegar
1/2 tsp Sriracha Hot Chili Sauce (less if you can't handle spicy)
1-2 Tbs crushed peanuts


Directions:
Soak Noodle according to package
Mix the dipping ingredients; Cup Hoisin Sauce, rice vinegar, Sriracha Hot Chili Sauce and set aside
Place filling ingredients in assembly order. Drain noodles thoroughly once soft. Put shallow cake pan with very warm water at the start of your assembly line.


Beautiful Spring Rolls!
This is where it takes practice.  You must soak the skins exactly long enough that they are pliable but not too long that they become too mushy and tear easily.
Once soaked, place on an assembly plate and promptly fill with ingredients. Roll by pulling the top edge over, then tucking in the sides then pulling up the bottom edge. Then set aside on a serving plate.  BEFORE grabbing the next skin, dry your assemble plate.

Once you have your spring rolls assembled, sprinkle the dipping sauce with peanuts and serve!

Asian Chicken Salad

This came to me in an email newsletter so I can take no credit for it but it is yummy!
Asian Chicken Salad
Serves: 4
The fruit that tops this salad packs this already healthy dish with even more vitamins. Reprinted with permission by Public Health - Seattle & King County.
INGREDIENTS 2 cups cooked chicken, skin removed, cut into bite-size pieces 4 cups cabbage, shredded 1 cup mushrooms, sliced 1 cup carrots, grated 2 tablespoons cilantro, chopped 1 cucumber, thinly sliced 3 green onions, thinly sliced 1 mandarin orange or tangerine, divided into sections 1/2 cup nonfat Asian-style salad dressing black pepper
DIRECTIONS 1. In a large bowl, combine chicken, cabbage, mushrooms, carrots, cilantro, cucumber, and dressing. Toss well. 2. Top with green onions and tangerine sections. Pepper to taste.

CORN AND POTATO CHOWDER with Bacon!

CORN AND POTATO CHOWDER

4 large Russet potatoes, cubed
3 cup red potatoes, cubed
3-4 cups chicken broth (enough to cover potatoes completely)
1 cup pearl onions, peeled and chopped
1 tablespoon minced garlic
1/2 package diced turkey bacon, chopped
1/2 cup butter substitute (like I Can't Believe It's Not Butter)
2 cups frozen corn
1 can cream corn
1/2 cup fat free sour cream
1 cup fat free half and half cream
1 tablespoon herb de Provence (A combination of herbs typically including basil, fennel, lavender, marjoram or mint, rosemary, savory, sage, and thyme.)
1-2 tsp course ground pepper
1/2-1 tsp. cayenne powder
1 tsp. parsley
Chives and Grated Sharp Cheddar as Garnish (optional)
Salt to Taste

Cube potatoes, onions, and bacon in even pieces. Simmer potatoes, bacon, onions and garlic in the chicken broth and butter until tender and the bacon is fully cooked.
When potatoes are tender, add sour cream, half and half, corn and seasonings; continue to simmer on medium low for 15-20 minutes or until it is reduced to desired thickness.
Season with salt and pepper to taste.

Potato Salads (reduced fat versions)

TRADITIONAL POTATO SALAD

what you need 3 hard-cooked eggs, yolks removed, + 1 for garnish
3/4 cup Non-fat Mayo/Mayonnaise
1 tsp.yellow mustard
6 cups cubed cooked red-skinned potatoes (about 1-1/2 lb.)
1/2 cup sliced celery
1/2 cup frozen peas, thawed
1/4 cup chopped onion
1/2 tsp. salt
1/4 tsp.pepper



Directions

CUT 1 of the eggs crosswise in half. Reserve 1 of the halves for garnish. Chop remaining eggs.

MIX mayo and mustard in large bowl. Add potatoes, chopped eggs, celery, peas, onion, salt and pepper; mix lightly. Cut reserved egg half into thin slices; arrange on top of salad. Cover.

REFRIGERATE several hours or overnight.






SOUR CREAM and BACON POTATO SALAD
what you need
2 lbs. red potatoes, about 6 med.
6 slices turkey bacon
2 eggs, beaten
1 c. dairy sour cream
1 tbsp. vinegar
1 tbsp. sugar
1/2 tsp. salt
1/8 tsp. white pepper
2 hard cooked eggs
1 med. onion, thinly sliced
Parsley

directions
Cook potatoes in water in their jackets until tender. In meantime, fry bacon, reserving 1/4 cup fat. Drain and crumble bacon. Prepare dressing by combining beaten eggs, bacon fat, sour cream, vinegar, sugar, salt and pepper. Cook over low heat until dressing has thickened slightly. Keep warm.
To assemble salad, peel and slice hot potatoes. Reserve a few egg slices for garnish. Combine potatoes with bacon and dressing. Garnish with hard-cooked egg slices and parsley. Serve warm or at room temperature. Makes 6 servings.



SOUR CREAM AND BACON POTATO SALAD -2
what you need
•6 medium potatoes, about 2 pounds
•1/2 cup finely chopped cooked bacon
•1/2 cup chopped onion
•1/2 cup chopped green bell pepper
•1/4 cup chopped celery
•1 tablespoon butter or margarine
•3/4 cup sour cream
•3 tablespoons vinegar
•1 teaspoon salt
•1/4 teaspoon pepper

Directions:
Cook potatoes, covered, in boiling salted water for 25 to 30 minutes or just until tender, Peel and slice potatoes to make about 6 cups. Meanwhile, in a large skillet cook ham, onion, green pepper, and celery in butter or margarine until tender; drain off fat. Stir in sour cream, vinegar, salt, and pepper. Heat through but do not boil. Combine sour cream mixture and potatoes in a large serving bowl. Serve potato salad right away.
Sour cream potato salad serves 8.

Quick Meals

The idea of these recipes is to be quick, healthy and using few ingredients. Please feel free to visit this blog post and add your favorite EASY recipes!

Grillin' Stir Fry (or just on the stove or in a wok)

Chop up veggies of your choice in large pieces (we like green peppers and zucchini) or a bag of frozen veggies (large pieces like broccoli work best)
Cut up pre-cooked sausage (we like the ring style - and if you find a lean version, this is very low-fat!)
Toss in bowl and spray lightly with non-stick cooking spray
Sprinkle on salt, pepper
Add a dash of red pepper flakes to add a little kick or garlic if desired
Put in a grill pan and heat over medium-high for 10 - 15 mins stirring occasionally.

-Serve with instant rice (we like the healthier brown rice) or instant potatoes OR cut up potatoes and add them right to your stir fry (but they need to be par-boiled first.

Traditional Creamy (Cold) Pasta Salad
Boil a box of noodles of your choice
While noodles are boiling mix together the follow in a large bowl:
A can of chicken or tuna (you can use fresh chicken but that requires extra time)
3/4 cup of mayo or miracle whip
1/4 cup of milk
1 tblsp of onion flakes
salt and pepper to taste
1/2 bag frozen peas or other small veggie of choice
Rinse noodles under cold water and stir in...

Simple Casserole
Spray a medium baking pan with cooking spray
Layer the pan as follows:
Spread canned of frozen green beans over the bottom of the pan
Then add pre-cooked chicken or hamburger/ground turkey
Sprinkle in dried onion flakes or chopped onion if desired
Spread one can of condensed cream of celery or mushroom over the meat (if you add milk, the casserole will be more runny)
Place frozen tater tots (or hashbrowns) over the top.
Bake on center or lower rack for 30 minutes at 375 or until the tater tots are golden brown.

Pepperoni Rotini Pasta Salad
Boil rotini noodles (we prefer tri-color)
While noodles are boiling prepare the following
In a large bowl, assemble broccoli (fresh or frozen), cherry tomatoes, black olives and pepperoni slices (omit/replace the undesired)
Rinse noodles under cold water and add to bowl
Pour 1/2 bottle of your favorite Italian dressing over the top and stir

Crock Pot Pork Tenderloin
Place pre-seasoned pork tenderloin in crock pot (garlic or lemon pepper or otherwise)
add one bag of baby carrots plus 4 chopped stalk of celery if desired
add 1-2 lbs of baby red potatoes (cut in half)
add 1 cup of water
cook 3-4 hours on high or 8 hours on low

Quick and Simple Chicken Chili (lowfat)
Put a large pot on the stove and turn burner to high
Add one large can of diced tomatoes
Add 1 tblsp of chili powder (use pre-seasoned chili tomatoes to simplify)
Add 1-2 tblsp of onion flakes (or 1/2 cup of diced onions)
Add 1 or 2 cans of beans of your choice depending on how many beans you like (we like dark red kidney and pinto beans)
Add 1-2 cans of chicken
Bring to boil then simmer 5-10 mins
*Optional - add 1 cup chopped celery and or chopped green peppers
**If you prefer beef or turkey, brown 1 lb of beef/turkey in the large pot and drain grease prior to adding tomatoes then omit can of chicken.

Pigs in a Blanket
Wrap hotdogs in pre-made croissant dough and bake according to croissant package (press shredded cheese into the inside of the dough prior to wrapping if desired)
Serve with fresh veggies and fruit for a well-rounded "finger-food" meal

Breakfast Tortillas (feel free to serve these for lunch or dinner!)
Place a few fresh spinach leaves on a tortilla shell
scramble eggs; place on tortilla shell, sprinkle with cheese and a spoon on salsa
Wrap and enjoy

Noodles/Rice Cheaters
Make 2 pouches/boxes of pre-seasoned rice or noodles according to package directions.
Just prior to the completed cooking time, add a can of chicken/precooked chicken or frozen shrimp or other pre-cooked "meat" of choice plus a can (drained) or frozen veggies of choice.

Chicken Noodle Soup
Place large pot on the stove on high and add 2 boxes of chicken stock (or make broth using bouillon)
Once boiling, add uncooked chunks of chicken
Pour in a bag of egg noodles and 1/2 bag of frozen carrots
Add 1/2 tsp basil and/or a bay leaf if desired
Add pepper to taste
Add 1 stalk chopped green onion if available/desired

TIP OF THE DAY:
Frying hamburger can be time consuming. Save time and money by buying in bulk (5-10 lbs). Fry it up then freeze it in individual freezer bags (1 lb per bag). You can quickly add it to chili, hamburger helper or casserole!

Potato Salad for Baked Potato Lovers

Easy Potato Salad
Collect all the toppings you would desire on a baked potato. (Sour cream, bacon bits, onions, etc)
Cube and boil enough salad potatoes for the number of people you plan to feed - 1-2 mid-sized potatoes per person. (Leave skins on for true baked potato style)
Cool potatoes in fridge for 20 mins.
Pull out potatoes and top with desired toppings.
Serve.

Doesn't get easier than that folks!
